“An estimated 3 million people in the United States have celiac disease” (U.S. Food and Drug Administration). In fact, these three million people who eat food that contains gluten damage their small intestine and put them at risk for other serious health problems such as bowel cancer (US Food and Drug Administration). Due to the high number of people suffering from celiac disease, there are more and more products advertising the absence of gluten. After doing some research on online grocery stores to see what gluten-free products they offered, I was shocked at how many gluten-free sweet products grocery stores had. So I decided to do some more research to see if there were any products that were naturally gluten-free. What I discovered shocked me; There are several naturally gluten-free products including: all fruits and vegetables, meat (unless breaded or fried with breadcrumbs which is gluten-free), and honey (The Complete List of Gluten-Free Foods) . So with this information I started doing some research into the requirements for listing a product as gluten-free. In August 2013, the U.S. Food and Drug Administration (FDA) published a rule that created a universal definition of "gluten-free" helping consumers be assured that products labeled "gluten-free" meet a defined standard on the gluten content (US Food and Drug Administration).
